Lebanese Rice Pilaf with Chickpeas and Vegetables

Ingredients

  • 1 cup rice
  • 1 can (15 oz), drained chickpeas
  • 1 medium, sliced red bell pepper
  • 1 medium, sliced onion
  • ½ cup plain yogurt
  • ¼ cup, chopped fresh parsley

Instructions

    Rinse the 1 cup rice under cold water until clear. In a medium pot, bring 2 cups water to a boil, add the rice and a pinch of salt, reduce heat to low, cover, and simmer until tender, about 15 minutes. Remove from heat and let stand, covered, for 5 minutes.

    While the rice cooks, heat 2 tbsp olive oil in a large skillet over medium heat. Add the 1 sliced onion and 1 sliced red bell pepper, and cook until soft and lightly browned, about 8 minutes. Stir in the drained chickpeas and cook for 2 more minutes, until heated through.

    Fluff the rice with a fork and gently fold in the chickpea mixture. Season with salt and pepper to taste.

    Serve the pilaf topped with the 0.5 cup yogurt and a sprinkle of the 0.25 cup chopped parsley. Add sliced green chili or fresh dill if you like extra heat and freshness.
