Ingredients
- 1.5 lb lamb stew meat
- 1 medium onion
- 1 medium red bell pepper
- 1 lb potatoes
- 14.5 oz canned diced tomatoes
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper

Heat 2 tbsp olive oil in a large pot over medium-high heat. Add 1.5 lb lamb stew meat in a single layer and brown on all sides, about 5-7 minutes. Work in batches if needed to avoid crowding.

Add 1 sliced onion and 1 chopped red bell pepper to the pot. Cook, stirring, until softened, about 5 minutes.

Pour in 14.5 oz canned diced tomatoes with their juices. Add 1 tsp salt and 0.5 tsp black pepper. Stir to combine.

Add 1 lb potatoes, peeled and cut into 1-inch chunks. Add enough water to just cover the meat and vegetables (about 1 cup).

Bring to a boil, then reduce heat to low. Cover and simmer until lamb is tender and potatoes are cooked through, about 1.5 hours. Check occasionally, adding water if needed.

Uncover and simmer for 10 more minutes to thicken the sauce slightly. Taste and adjust seasoning with salt and pepper if needed.
