Ingredients
- 1 lb lamb, cut into 1-inch cubes
- 1 whole lemon, divided (zested + juiced)
- 3 cloves garlic cloves, minced
- 1.5 tsp dried oregano
- 3 tbsp olive oil
- 1 pinch salt and pepper to taste

Toss lamb with lemon juice, zest, garlic, oregano, 2 tbsp olive oil, salt, and pepper in a bowl.

Heat remaining 1 tbsp olive oil in a large skillet over medium-high until shimmering, about 1 minute.

Working in batches, sear lamb without stirring for 2 minutes until golden on one side.
