Ingredients

  • 1 lb lamb, cut into 1-inch cubes
  • 1 whole lemon, divided (zested + juiced)
  • 3 cloves garlic cloves, minced
  • 1.5 tsp dried oregano
  • 3 tbsp olive oil
  • 1 pinch salt and pepper to taste

Instructions

    Toss lamb with lemon juice, zest, garlic, oregano, 2 tbsp olive oil, salt, and pepper in a bowl.

    Heat remaining 1 tbsp olive oil in a large skillet over medium-high until shimmering, about 1 minute.

    Working in batches, sear lamb without stirring for 2 minutes until golden on one side.

    Stir and cook 2 more minutes until edges are charred and meat is medium-rare inside.

    Transfer to a plate and let rest 2 minutes before serving.
