Ingredients

  • 1 lb pork belly, thinly sliced (ask butcher to slice 1/8-inch thick)
  • 3 tbsp soy sauce
  • 1 tbsp mirin or honey
  • 1 tsp sesame oil
  • 1 tbsp butter
  • 1 batch butter lettuce or romaine leaves, fresh herbs (perilla, green onion, cilantro), and gochujang (Korean red chili paste) for serving

Instructions

  1. 1

Stir soy sauce, mirin, and sesame oil in a small bowl until combined. Set aside.

  2. 2

Heat a large cast-iron skillet or griddle over medium-high until a water drop sizzles and evaporates instantly, ~2 minutes.

  3. 3

Working in batches, lay pork slices flat on the hot skillet without crowding. Let cook 45 seconds undisturbed until edges start to crisp and fat renders.

  4. 4

Flip each slice and cook 45 seconds on the other side until cooked through and edges are golden. Transfer to a plate.

  5. 5

Add butter to the skillet and cook any remaining pork in batches until finished.

  6. 6

Serve pork on a platter with lettuce leaves, fresh herbs, gochujang, and the dipping sauce on the side. Wrap pork in lettuce and dip as you eat.
