Ingredients
- 1 lb pork belly, thinly sliced (ask butcher to slice 1/8-inch thick)
- 3 tbsp soy sauce
- 1 tbsp mirin or honey
- 1 tsp sesame oil
- 1 tbsp butter
- 1 batch butter lettuce or romaine leaves, fresh herbs (perilla, green onion, cilantro), and gochujang (Korean red chili paste) for serving

Stir soy sauce, mirin, and sesame oil in a small bowl until combined. Set aside.

Heat a large cast-iron skillet or griddle over medium-high until a water drop sizzles and evaporates instantly, ~2 minutes.

Working in batches, lay pork slices flat on the hot skillet without crowding. Let cook 45 seconds undisturbed until edges start to crisp and fat renders.

Flip each slice and cook 45 seconds on the other side until cooked through and edges are golden. Transfer to a plate.

Add butter to the skillet and cook any remaining pork in batches until finished.
