Ingredients
- 1 lb ground beef (80% lean)
- 1 medium onion
- 1 tsp salt
- ½ tsp black pepper
- ¼ tsp baking soda

Grate the 1 onion and squeeze out excess liquid. In a bowl, mix the grated onion, 1 lb ground beef, 1 tsp salt, 0.5 tsp black pepper, and 0.25 tsp baking soda until well combined.

Divide the mixture into 4 equal portions. Shape each portion around a flat metal skewer, pressing firmly into a long, thin sausage shape about 6 inches long.

Preheat a charcoal grill until coals are glowing and covered with white ash. Place the skewers over the hottest part of the grill.

Grill the kebabs for 4-5 minutes per side, turning once, until nicely charred on the outside and cooked through (no pink in the center).
