Ingredients
- 2 cups sushi rice
- 4 sheets nori sheets
- 1 medium carrot
- 2 cups spinach
- 4 slices ham
- 3 large eggs

Cook 2 cups sushi rice according to package; season with a pinch of salt and 1 tsp sesame oil if you have it. Let cool slightly.

Julienne 1 carrot and sauté in 1 tsp oil over medium-high until tender, about 3 minutes. Wilt 2 cups spinach in the same pan, about 1 minute; squeeze out excess water.

Beat 3 eggs with a pinch of salt; cook in a lightly oiled pan over medium-low into a thin omelet, about 2 minutes per side. Slice into strips.

Lay 1 nori sheet on a bamboo mat. Spread 1/2 cup rice evenly, leaving a 1-inch border. Layer carrot, spinach, 1 slice ham, and egg strips in a line.
