Ingredients

  • 3 oz ramen or egg noodles (crispy)
  • ¾ lb shrimp, peeled and deveined
  • 3 tbsp khao soi curry paste
  • ¾ cup coconut milk, full fat
  • 1 tbsp fish sauce
  • 1 whole lime (juiced)
  • 2 whole scallions, sliced thin
  • 1 whole shallots, thinly sliced

Instructions

    Boil noodles in salted water until al dente, then drain and set aside.

    Heat 2 tbsp oil in a large skillet over medium-high until shimmering.

    Sear shrimp 90 seconds per side until pink and opaque, then set aside.

    Add curry paste to the same skillet, stir constantly for 1 minute until fragrant.

    Pour in coconut milk and fish sauce, stir gently, then return shrimp to skillet.

    Divide noodles between bowls, ladle sauce and shrimp on top, squeeze lime over, garnish with scallions and shallots.
