Ingredients
- 3 oz ramen or egg noodles (crispy)
- ¾ lb shrimp, peeled and deveined
- 3 tbsp khao soi curry paste
- ¾ cup coconut milk, full fat
- 1 tbsp fish sauce
- 1 whole lime (juiced)
- 2 whole scallions, sliced thin
- 1 whole shallots, thinly sliced

Boil noodles in salted water until al dente, then drain and set aside.

Heat 2 tbsp oil in a large skillet over medium-high until shimmering.

Sear shrimp 90 seconds per side until pink and opaque, then set aside.

Add curry paste to the same skillet, stir constantly for 1 minute until fragrant.

Pour in coconut milk and fish sauce, stir gently, then return shrimp to skillet.
