Kerala Puttu

Steamed rice flour and coconut layered in a bamboo steamer, a classic South Indian breakfast that's light, fluffy, and subtly spiced with cinnamon.

Ingredients

  • 2 cups rice flour
  • 1 cup fresh coconut
  • ½ cup water
  • ½ teaspoon salt
  • 1 piece cinnamon stick

Instructions

    In a bowl, mix 2 cups rice flour with 0.5 teaspoon salt. Gradually add 0.5 cup water, rubbing with your fingers until the flour feels like damp sand and holds a fistful shape.

    Fill the bottom of a puttu steamer with water and bring to a boil over medium-high heat. Place the perforated disc inside the steamer tube.

    Layer the damp rice flour and 1 cup fresh coconut in the steamer tube, starting and ending with flour. Insert 1 cinnamon stick into the center.

    Place the tube on the steamer and cover. Steam over medium-high heat until steam rises steadily from the top, about 8-10 minutes.

    Remove from heat, let rest for 1 minute, then gently push the puttu out onto a plate. Serve hot with kadala curry or ripe banana.
