Ingredients

  • 1 cup poha (flattened rice)
  • 1 medium onion
  • 2 tablespoons vegetable oil
  • ½ teaspoon turmeric powder
  • ½ teaspoon salt
  • 1 tablespoon lemon juice

Instructions

  1. 1

Rinse the 1 cup poha in a colander under cold water until just softened, about 30 seconds. Drain well and set aside.

  2. 2

Heat the 2 tbsp oil in a skillet over medium heat. Add the 1 sliced onion and cook until soft and golden, about 5 minutes.

  3. 3

Add the 0.5 tsp turmeric and 0.5 tsp salt. Stir for 30 seconds until fragrant.

  4. 4

Add the drained poha and toss gently with the onion mixture until evenly coated and heated through, about 3 minutes. The poha should be tender but not mushy.

  5. 5

Remove from heat and sprinkle with the 1 tbsp lemon juice. Toss once and serve warm.
