Ingredients
- 1.5 lb chicken pieces
- 2 cups basmati rice
- 1 large onion
- 2 medium carrots
- 2 tbsp pilau masala
- 3 cloves garlic
- 3.5 cups chicken broth
- 3 tbsp vegetable oil

Heat 3 tbsp vegetable oil in a large pot over medium heat. Add 1 sliced onion and cook until soft and golden, about 8 minutes.

Add 3 minced garlic cloves and 2 tbsp pilau masala. Stir for 1 minute until fragrant.

Add 1.5 lb chicken pieces and brown on all sides, about 5 minutes. Season with salt and pepper.

Stir in 2 cups basmati rice and 2 diced carrots. Cook for 2 minutes, coating rice with oil.

Pour in 3.5 cups chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer until rice is tender and liquid absorbed, about 20 minutes.
