Ingredients
- 1.5 lb beef sirloin
- 1 medium onion
- 1 large bell pepper
- 1 medium zucchini
- 3 cloves garlic
- ¼ cup dill
- 1 medium cucumber
- 3 tbsp olive oil

Cut the 1.5 lb beef sirloin into 1-inch cubes. In a bowl, combine the beef with 3 minced garlic cloves, 1/4 cup chopped dill, 2 tbsp olive oil, and a pinch of salt and pepper. Toss to coat, then let marinate for at least 30 minutes (or up to 2 hours).

While the meat marinates, cut the 1 onion, 1 bell pepper, and 1 zucchini into 1-inch chunks. Place them in a bowl and toss with the remaining 1 tbsp olive oil and a pinch of salt.

Thread the marinated beef and the vegetables onto skewers, alternating between meat and vegetables. Do not crowd the pieces—leave a small gap between each for even cooking.

Preheat your grill or grill pan to medium-high heat. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the meat is browned on all sides and reaches your desired doneness (about 135°F for medium-rare). The vegetables should be tender and slightly charred.

Remove the skewers from the grill and let them rest for 5 minutes. Meanwhile, slice the 1 cucumber into thin rounds. Serve the kebabs hot, with the cucumber slices on the side.
