Ingredients
- 1.5 cups semolina
- ½ cup butter
- 2 cups mozzarella cheese
- 1 cup sugar
- 1 cup water
- 1 tbsp lemon juice
- ¼ cup pistachios

In a small saucepan, combine 1 cup sugar, 1 cup water, and 1 tbsp lemon juice. Bring to a boil, then simmer for 10 minutes until slightly thickened. Set aside to cool.

In a bowl, mix 1.5 cups semolina with 0.5 cup melted butter until the mixture resembles wet sand.

Press half of the semolina mixture into the bottom of a 9-inch baking dish, packing it firmly.

Spread 2 cups shredded mozzarella evenly over the semolina base.

Top with the remaining semolina mixture, pressing gently to cover the cheese completely.
