Kärntner Kasnudeln

A hearty Austrian-style filled pasta with a simple potato-cheese filling, served with browned butter. This weeknight-friendly version uses store-bought wonton wrappers to skip the dough-making step.

Ingredients

  • 24 wrappers wonton wrappers
  • 1 large potato
  • 1 cup cottage cheese
  • 2 tbsp chives
  • 1 tsp salt
  • ½ tsp black pepper
  • 4 tbsp butter

    Boil the 1 large potato in salted water until fork-tender, about 20 minutes. Drain, cool slightly, then peel and mash in a bowl.

    Mix the mashed potato with 1 cup cottage cheese, 2 tbsp chopped chives, 1 tsp salt, and 0.5 tsp black pepper until well combined.

    Place 1 tbsp of filling in the center of each wonton wrapper. Moisten edges with water, fold into a triangle, and press to seal, removing air bubbles.

    Bring a large pot of salted water to a boil. Cook the kasnudeln in batches of 6-8 for 3-4 minutes until they float and are tender.

    Meanwhile, melt 4 tbsp butter in a skillet over medium heat until it turns golden brown and smells nutty, about 3 minutes.

    Drain the kasnudeln and toss with the browned butter. Serve hot, garnished with extra chives if desired.
