Ingredients

  • 2 lbs chicken breast, cut into 1.5-inch cubes
  • ¾ cup plain yogurt
  • 1 whole lemon, juiced
  • ½ medium onion, grated or minced
  • ¼ tsp saffron threads, steeped in 2 tbsp warm water
  • 3 cloves garlic, minced
  • 1 pinch salt and pepper to taste

Instructions

    Combine yogurt, lemon juice, grated onion, saffron water, garlic, salt, and pepper in a bowl.

    Add chicken cubes to marinade, toss to coat evenly. Cover and refrigerate at least 2 hours, preferably 4.

    Thread marinated chicken onto metal skewers, dividing evenly between 4 skewers.

    Preheat grill to medium-high, about 400°F. Oil the grates lightly to prevent sticking.

    Grill skewers 12–15 minutes, turning every 3 minutes, until edges char and chicken is cooked through.

    Rest skewers on a plate for 2 minutes. Serve hot with saffron rice and grilled tomatoes.
