Ingredients
- 2 cups jollof rice
- 2 pieces chicken thighs
- 2 cups french fries
- 3 tbsp vegetable oil
- 1 tsp salt
- ½ tsp black pepper

Season the 2 chicken thighs with 1/2 tsp salt and 1/4 tsp black pepper. Heat 2 tbsp vegetable oil in a skillet over medium-high until shimmering, about 2 minutes.

Fry the chicken skin-side down until golden and crispy, about 6 minutes per side, until cooked through (internal temp 165°F). Remove and set aside.

In the same skillet, add the 2 cups jollof rice and 1 tbsp vegetable oil. Stir-fry over medium heat until heated through and slightly smoky, about 5 minutes.

Meanwhile, cook the 2 cups french fries according to package directions (or deep-fry at 375°F until golden, about 4 minutes). Season with remaining salt and pepper.

Plate the jollof rice, top with fried chicken and fries. Garnish with tomato slices and lettuce if desired.
