Ingredients
- 2 tbsp jerk seasoning
- 1 lb chicken breast
- 1 cup brown rice
- 15 oz black beans
- 2 ripe plantains
- 3 tbsp olive oil
- ¼ cup cilantro

Rub the 1 lb chicken breast with the 2 tbsp jerk seasoning, coating evenly. Let it sit while you prepare the other ingredients.

Cook the 1 cup brown rice according to package instructions, about 25-30 minutes, until tender and fluffy.

Heat 1 tbsp of the olive oil in a skillet over medium-high. Add the seasoned chicken and cook until browned and cooked through, about 6-7 minutes per side. Let rest, then slice.

In a small pot, warm the 15 oz black beans (drained and rinsed) over medium heat, stirring occasionally, until hot, about 5 minutes.
