Ingredients

  • 2 tbsp jerk seasoning
  • 1 lb chicken breast
  • 1 cup brown rice
  • 15 oz black beans
  • 2 ripe plantains
  • 3 tbsp olive oil
  • ¼ cup cilantro

Instructions

    Rub the 1 lb chicken breast with the 2 tbsp jerk seasoning, coating evenly. Let it sit while you prepare the other ingredients.

    Cook the 1 cup brown rice according to package instructions, about 25-30 minutes, until tender and fluffy.

    Heat 1 tbsp of the olive oil in a skillet over medium-high. Add the seasoned chicken and cook until browned and cooked through, about 6-7 minutes per side. Let rest, then slice.

    In a small pot, warm the 15 oz black beans (drained and rinsed) over medium heat, stirring occasionally, until hot, about 5 minutes.

    Peel and slice the 2 plantains into 1/2-inch rounds. Heat the remaining 2 tbsp olive oil in a skillet over medium. Cook the plantains until golden and caramelized, about 3-4 minutes per side.

    Assemble bowls with the cooked rice, sliced chicken, black beans, and plantains. Garnish with the 1/4 cup chopped cilantro and serve.
