Jelly-Filled Donuts

Ingredients

  • 2 cups all-purpose flour
  • 1 packet active dry yeast
  • ¾ cup milk
  • 1 large egg
  • ¼ cup sugar
  • 2 tbsp butter
  • ½ cup jelly or jam
  • 2 cups vegetable oil

Instructions

    Warm the 3/4 cup milk until lukewarm, then stir in the 1 packet yeast and 1 tbsp of the 1/4 cup sugar. Let sit until foamy, about 5 minutes.

    In a large bowl, mix the 2 cups flour, remaining 3 tbsp sugar, 1 egg, and 2 tbsp softened butter. Pour in the yeast mixture and stir until a soft dough forms.

    Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm spot until doubled, about 1 hour.

    Roll the dough to 1/2-inch thickness and cut into 8 rounds. Place on a floured tray, cover, and let rise again for 30 minutes until puffy.

    Heat the 2 cups oil in a deep pot to 350°F. Fry the donuts in batches, 2-3 at a time, for 1-2 minutes per side until golden brown. Drain on paper towels.

    Once cool enough to handle, use a piping bag with a small tip to inject about 1 tbsp of the 1/2 cup jelly into each donut. Dust generously with powdered sugar.
