Ingredients
- 2 lbs pork ribs (baby back or St. Louis cut)
- ½ cup kecap manis (sweet soy sauce)
- 2 tbsp fresh ginger, minced
- 1.5 lbs roasted potatoes (pre-cooked or frozen)
- 1 box boxed mac and cheese (prepared)
- 2 tbsp lime juice
- 3 cloves garlic cloves, minced
- 3 tbsp neutral oil

Preheat oven to 450°F. Pat ribs dry with paper towels and season generously with salt and pepper.

Whisk kecap manis, ginger, lime juice, and garlic in a small bowl until smooth and combined.

Arrange ribs on a sheet pan, brush both sides with half the glaze. Toss potatoes with oil and season with salt; scatter around ribs.

Roast for 18 minutes until edges are charred and ribs are nearly cooked through.

Brush remaining glaze over ribs, arrange prepared mac and cheese on the pan, and roast 6 more minutes until everything is caramelized.
