Indonesian Grilled Fish with Peanut Sauce

Ingredients
- 4 filets white fish fillets
- ½ cup peanut butter
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 1 tbsp sambal oelek or chili garlic sauce
- 4 leaves lettuce leaves

Pat the 4 fish fillets dry and season both sides with salt and pepper. Heat a grill pan or outdoor grill over medium-high heat.

In a small bowl, whisk together the 1/2 cup peanut butter, 2 tbsp soy sauce, 2 tbsp lime juice, 1 tbsp sambal oelek, and 3 tbsp water until smooth. Set aside.

Grill the fish for 3-4 minutes per side, until it flakes easily with a fork and has nice grill marks. Remove from heat.

Serve the fish on a bed of lettuce leaves, drizzle generously with the peanut sauce, and garnish with cucumber slices and fresh cilantro if you have them.
