Indonesian Fried Noodles

A quick and flavorful weeknight stir-fry with shrimp, noodles, and a spicy-sweet soy sauce glaze, topped with fresh tomatoes and green onions.

Ingredients

  • 8 oz egg noodles
  • 8 oz shrimp, peeled and deveined
  • 3 tbsp soy sauce
  • 1 tbsp sambal oelek
  • 2 tbsp vegetable oil
  • 1 cup cherry tomatoes, halved
  • 3 stalks green onions, sliced
  • 2 tbsp green chilies, thinly sliced

Instructions

    Cook the 8 oz egg noodles in boiling salted water until just tender, about 4 minutes. Drain and rinse with cold water to stop cooking.

    In a small bowl, mix the 3 tbsp soy sauce and 1 tbsp sambal oelek. Set aside.

    Heat the 2 tbsp vegetable oil in a large skillet or wok over high heat. Add the 8 oz shrimp and cook until pink and opaque, about 2 minutes per side. Remove shrimp and set aside.

    Add the cooked noodles to the hot skillet and stir-fry for 1-2 minutes until lightly charred in spots.

    Return the shrimp to the skillet, pour in the soy-sambal mixture, and toss everything together for 1 minute until the sauce coats the noodles.

    Remove from heat and stir in the 1 cup cherry tomatoes, 3 sliced green onions, and 2 tbsp green chilies. Serve immediately.

    Optional: add a squeeze of lime or a sprinkle of sugar for extra brightness.
