Ingredients

  • 1 lb ground beef
  • 6 cups beef broth
  • 2 tbsp ginger, minced
  • 1 tsp turmeric powder
  • ½ tsp coriander powder
  • ½ cup fried shallots
  • 1 cup emping crackers
  • 3 tbsp sweet soy sauce (kecap manis)

Instructions

Heat oil in a large pot over medium-high. Add ground beef and break it up with a spoon, stirring constantly until no pink remains, about 5 minutes.

  2. 2

Stir in minced ginger, turmeric, and coriander. Cook for 1 minute until fragrant, then pour in beef broth.

  3. 3

Bring to a boil, then reduce heat to medium and simmer for 12 minutes. Season with salt and pepper to taste.

  4. 4

Stir in sweet soy sauce until combined. Taste and adjust seasoning if needed.

  5. 5

Ladle soup into bowls and top generously with crispy fried shallots. Serve with emping crackers on the side.
