Ingredients

  • 1 lb ground beef
  • 6 cups beef broth
  • 2 tbsp ginger, minced
  • 3 medium shallots, sliced
  • 2 whole limes (juiced + wedges for serving)
  • 2 tbsp soy sauce

Instructions

    Heat oil in a large pot over medium-high. Brown ground beef, breaking it up with a spoon, until no pink remains, about 5 minutes.

    Add ginger and sliced shallots. Stir constantly for 1 minute until fragrant.

    Pour in beef broth and soy sauce. Bring to a simmer over medium heat.

    Simmer for 10 minutes to meld flavors and soften the shallots.

    Stir in lime juice. Taste and adjust soy sauce or salt as needed.
