Ingredients
- 6 oz somen noodles (dried)
- 2 cups ice cubes
- ½ cup soy sauce
- ½ cup dashi stock (or water with 1 tsp instant dashi powder)
- 1 tbsp fresh ginger, grated
- 2 stalks scallions, sliced thin
- 1 sheet nori (seaweed sheets), torn into strips

Bring a large pot of water to a boil. Add somen and stir to separate strands.

Cook for 2 minutes until just tender, then drain and rinse under cold running water until completely chilled.

Whisk soy sauce, dashi stock, and grated ginger in a small bowl until combined.

Divide ice cubes between two shallow bowls or plates. Pile chilled noodles on top of the ice.

Top with scallion slices and torn nori strips. Pour dipping sauce into two small bowls on the side.
