Ingredients

  • 12 whole okra
  • 4 whole dried chili peppers
  • 2 tablespoons soy sauce
  • 2 whole scallions
  • 2 tablespoons vegetable oil
  • ½ teaspoon salt

Instructions

  1. 1

Wash and dry the 12 okra, then trim the stems. Slice the 2 scallions thinly, separating white and green parts.

  2. 2

Heat 2 tbsp vegetable oil in a large skillet over high heat. Add the okra in a single layer and cook without stirring for 3-4 minutes until the bottoms blister and char.

  3. 3

Flip the okra and cook another 3-4 minutes until blistered on all sides. Add the 4 dried chili peppers and the white scallion parts; stir-fry for 1 minute until fragrant.

  4. 4

Pour in 2 tbsp soy sauce and 0.5 tsp salt. Toss everything for 1-2 minutes until the sauce coats the okra and sizzles.

  5. 5

Transfer to a plate and sprinkle with the green scallion parts. Serve hot.
