Hummus
A creamy, homemade chickpea dip topped with olives and served with fresh cucumber, tomato, and warm pita bread. Perfect for a quick snack or appetizer.

Ingredients
- 1 can (15 oz) canned chickpeas
- ¼ cup tahini
- 2 tbsp lemon juice
- 1 clove garlic
- 3 tbsp olive oil
- ½ tsp salt
- 2 pieces pita bread
- 1 cup assorted vegetables (cucumber, tomato, olives)

Drain and rinse the 1 can of chickpeas. Add them to a food processor with 1/4 cup tahini, 2 tbsp lemon juice, 1 garlic clove, and 1/2 tsp salt.

Blend the mixture, scraping down the sides as needed, until smooth and creamy, about 2 minutes. If too thick, add water 1 tbsp at a time until desired consistency.

With the processor running, slowly drizzle in 2 tbsp of the olive oil. Blend until fully incorporated, about 30 seconds.

Transfer the hummus to a serving bowl. Use the back of a spoon to create a swirl on top.

Drizzle the remaining 1 tbsp olive oil over the hummus. Arrange the 1 cup of cucumber, tomato, and olives on top.

Warm the 2 pita bread pieces in a toaster or oven for 2-3 minutes until soft and slightly toasted. Cut into wedges and serve with the hummus.

Serve immediately, or cover and refrigerate for up to 3 days.
