Ingredients
- 2 tbsp olive oil
- 1 medium onion
- 2 medium carrots
- 2 stalks celery
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp salt
- ½ tsp black pepper

Heat the 2 tbsp olive oil in a large pot over medium heat. Add the 1 diced onion and cook until soft and translucent, about 5 minutes.

Add the 2 chopped carrots and 2 chopped celery stalks. Cook, stirring occasionally, until they begin to soften, about 5 minutes.
