Ingredients

  • 1 medium (about 2 lbs) butternut squash
  • 3 tbsp butter
  • 3 tbsp honey

Instructions

  1. 1

Cut butternut squash in half lengthwise, scoop out seeds, then slice each half into 1/2-inch-thick wedges.

  2. 2

Toss squash with salt, pepper, and olive oil on a sheet pan, then spread in a single layer.

  3. 3

Roast at 425°F for 15 minutes until edges start to brown and flesh softens.

  4. 4

Dot squash with butter pieces, drizzle with honey, then roast another 8 minutes until caramelized.

  5. 5

Serve hot, scraping up any caramelized honey from the pan and spooning it over the squash.
