Ingredients

  • 2 slices sourdough bread
  • 1 cup ricotta cheese
  • 2 tablespoons honey
  • 1 large shallots
  • 2 tablespoons olive oil
  • ½ cup microgreens
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. 1

Thinly slice the 1 large shallot into rings. Heat 2 tbsp olive oil in a small skillet over medium heat and add the shallots. Cook, stirring often, until golden and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels.

  2. 2

Toast the 2 slices of sourdough bread until golden and crisp, about 3-4 minutes per side in a toaster or under a broiler.

  3. 3

In a small bowl, season the 1 cup ricotta with 1/4 tsp salt and 1/4 tsp black pepper. Stir to combine.

  4. 4

Spread the seasoned ricotta generously over each slice of toasted bread, about 1/2 cup per slice.

  5. 5

Drizzle 1 tbsp honey over each slice of ricotta toast.

  6. 6

Top each toast with the crispy shallots and 1/4 cup of microgreens. Serve immediately.

  7. 7

Optional: add a pinch of red pepper flakes or a few fresh thyme leaves for extra flavor.
