Ingredients

  • 2 cups all-purpose flour
  • ¾ cup cold butter, cubed
  • ¼ tsp salt
  • 6 tbsp ice water
  • ¾ cup jam or preserves (any flavor)
  • ¾ cup powdered sugar
  • 2 tbsp milk

    Combine flour and salt in a large bowl.

    Add cold butter cubes and rub with your fingertips until the mixture resembles coarse breadcrumbs.

    Add ice water 1 tablespoon at a time, stirring gently until dough just comes together.

    Form dough into a disk, wrap in plastic, and chill for 15 minutes.

    Preheat oven to 400°F. Line a baking sheet with parchment paper.

    Roll dough between two sheets of plastic wrap into a thin rectangle, ~1/8 inch thick.

    Cut dough into 16 rectangles about 3 inches by 2 inches.

    Place 1 tablespoon jam in the center of 8 rectangles. Top each with a second rectangle.

    Press edges firmly with a fork to seal. Prick the top of each pastry 3 times with the fork.

    Arrange pastries on the baking sheet and bake until golden brown, 12–15 minutes.

    While pastries cool, whisk powdered sugar and milk until smooth. Drizzle over warm pastries.
