Ingredients
- ½ cup whole milk, cold
- 1 shot (1 oz) espresso (freshly brewed)
- ½ tsp sugar
- 1 whole biscotti or digestive cookie (for serving)

Pour cold milk into a metal frothing pitcher (or tall glass), filling it no more than one-third full.

Insert a steam wand (or use a milk frother) and submerge the tip just below the surface until milk is hot and foamy, ~60 seconds.

Brew 1 shot of espresso into a cappuccino cup (or small mug).

Pour steamed milk into the espresso, holding back the foam with a spoon, filling the cup about two-thirds full.

Top with a layer of microfoam (about 0.5 inch) and dust lightly with cocoa powder if desired.
