Ingredients

  • 1.75 cups all-purpose flour
  • ½ cup sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 large egg
  • ½ cup whole milk
  • 1 tsp vanilla extract
  • 3 cups vegetable oil (for frying)
  • 1 cup powdered sugar (for glaze)

Instructions

  1. 1

Whisk flour, sugar, baking powder, and salt in a bowl until combined.

  2. 2

Whisk egg, milk, and vanilla in another bowl until smooth.

  3. 3

Pour wet mixture into dry ingredients and stir until just combined—do not overmix.

  4. 4

Transfer batter to a piping bag fitted with a large plain tip.

  5. 5

Heat oil in a deep pot to 350°F (175°C). Use a thermometer to verify temperature.

  6. 6

Pipe 3-inch rings of batter directly into hot oil, leaving space between each.

  7. 7

Fry 60–90 seconds per side until golden brown all over. Do not move them while cooking.

  8. 8

Lift donuts onto a paper-towel-lined plate to drain. Repeat until all batter is used.

  9. 9

Whisk powdered sugar with 2 tbsp warm water in a shallow bowl until pourable.

  10. 10

Dip tops of warm donuts into glaze and return to plate to set, ~5 minutes.

  11. 11

    Serve while still warm.
