Ingredients

  • 500 g herring fillets
  • 1 cup olive oil
  • 4 sprigs fresh rosemary
  • 2 cloves garlic
  • 1 whole lemon
  • 1 tbsp black peppercorns
  • 1 tsp salt

    Rinse the 500g herring fillets under cold water and pat dry with paper towels. Cut each fillet into 2-3 pieces if large.

    In a small bowl, combine 1 cup olive oil, 2 minced garlic cloves, 1 tbsp black peppercorns, and 1 tsp salt. Stir well.

    Place the herring pieces in a shallow dish and pour the oil mixture over them. Add 4 sprigs of fresh rosemary and the zest of 1 lemon.

    Cover and refrigerate for at least 2 hours, or up to overnight, to allow the flavors to meld.

    Soak 8 wooden skewers in water for 30 minutes to prevent burning.

    Thread the marinated herring pieces onto the skewers, alternating with rosemary leaves.

    Heat a grill or grill pan over medium-high heat. Grill the skewers for 3-4 minutes per side, until the herring is opaque and lightly charred, about 8 minutes total.

    Serve hot or cold, drizzled with a little extra olive oil and a squeeze of lemon juice.
