Herbed Rice with Fish

Ingredients
- 1.5 cups basmati rice
- 1 cup mixed fresh herbs (dill, parsley, cilantro)
- 4 fillets white fish fillets
- 1 whole lemon
- 2 cloves garlic
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper

Rinse the 1.5 cups basmati rice in cold water until clear, then soak in fresh water for 20 minutes.

In a large pot, bring 4 cups salted water to a boil. Add the soaked rice and cook until just tender, about 7 minutes. Drain and set aside.

While the rice cooks, pat the 4 fish fillets dry and season both sides with the 1 tsp salt and 0.5 tsp black pepper.

Heat 2 tbsp of the olive oil in a large skillet over medium-high heat. Add the fish fillets and cook until golden and flaky, about 3-4 minutes per side. Remove and keep warm.

In the same skillet, add the remaining 1 tbsp olive oil and the 2 minced garlic cloves. Sauté until fragrant, about 1 minute.

Add the 1 cup chopped fresh herbs and the juice of 1 lemon to the skillet. Stir and cook for 2 minutes, until herbs are wilted and aromatic.

Combine the cooked rice with the herb mixture in a large bowl, tossing gently to distribute the herbs evenly.

Serve the herbed rice topped with the fish fillets and extra lemon wedges if desired.
