Ingredients
- 500 g quark
- 800 g potatoes
- 20 g chives
- 2 tbsp milk
- ½ tsp salt
- ¼ tsp black pepper

Scrub the 800g potatoes and place them in a large pot. Cover with cold water and add a pinch of salt. Bring to a boil, then reduce to a simmer. Cook until fork-tender, about 20-25 minutes.

While potatoes cook, finely chop the 20g chives, reserving a few for garnish.

In a bowl, combine the 500g quark, 2 tbsp milk, 0.5 tsp salt, 0.25 tsp black pepper, and most of the chopped chives. Stir until smooth and creamy. Adjust seasoning to taste.

Drain the potatoes and let them cool slightly until just warm, about 5 minutes.
