Ingredients
- 8 large eggs
- 2 cups fresh spinach
- 1 cup fresh herbs (parsley, dill, chives)
- ½ cup Parmesan cheese
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper

Preheat the oven to 375°F (190°C). In a large bowl, whisk the 8 eggs with 0.5 tsp salt and 0.25 tsp pepper until frothy.

Stir in the 1 cup chopped fresh herbs and 2 cups spinach until well combined.

Heat the 2 tbsp olive oil in a 10-inch oven-safe skillet over medium heat. Pour in the egg mixture and cook without stirring until the edges set, about 3-4 minutes.

Sprinkle the 0.5 cup grated Parmesan evenly over the top.

Transfer the skillet to the oven and bake until the center is just set and the top is lightly golden, about 10-12 minutes.
