Ingredients

  • 2 fillets (6 oz each) cod, halibut, or sea bass fillets
  • ½ cup panko breadcrumbs
  • ¼ cup fresh herbs (parsley, dill, or oregano), finely chopped
  • 1 whole lemon, zested and halved
  • 2 cloves garlic, minced
  • 3 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

    Pat fish fillets dry with paper towels. Season both sides with salt and pepper.

    Mix panko, fresh herbs, lemon zest, garlic, and 0.5 tbsp olive oil in a shallow bowl.

    Press each fillet into the herb mixture, coating both sides evenly and pressing gently so it adheres.

    Heat 2.5 tbsp olive oil in a 12-inch skillet over medium-high until it shimmers, ~90 seconds.

    Slide fish into the skillet. Sear without moving for 4 minutes until the crust is golden brown.

    Flip fish carefully. Sear 3 more minutes until the second side is golden and fish flakes easily.

    Transfer fish to a plate. Squeeze fresh lemon juice over the top and serve immediately.
