Ingredients
- 2 fillets (6 oz each) cod, halibut, or sea bass fillets
- ½ cup panko breadcrumbs
- ¼ cup fresh herbs (parsley, dill, or oregano), finely chopped
- 1 whole lemon, zested and halved
- 2 cloves garlic, minced
- 3 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper

Pat fish fillets dry with paper towels. Season both sides with salt and pepper.

Mix panko, fresh herbs, lemon zest, garlic, and 0.5 tbsp olive oil in a shallow bowl.

Press each fillet into the herb mixture, coating both sides evenly and pressing gently so it adheres.

Heat 2.5 tbsp olive oil in a 12-inch skillet over medium-high until it shimmers, ~90 seconds.

Slide fish into the skillet. Sear without moving for 4 minutes until the crust is golden brown.

Flip fish carefully. Sear 3 more minutes until the second side is golden and fish flakes easily.
