Ingredients
- 2 cups Greek yogurt (full-fat)
- 1 medium, grated & squeezed dry cucumber
- ¼ cup, minced fresh dill (or mint + parsley)
- 2 cloves, minced garlic
- 1 tbsp lemon juice
- 2 tbsp, plus more for drizzle extra-virgin olive oil

Grate cucumber on the large holes of a box grater, then squeeze hard in a clean towel until no liquid remains.

Fold Greek yogurt, squeezed cucumber, dill, garlic, and lemon juice together in a bowl until combined.

Taste and season with salt and pepper. Drizzle with olive oil and a pinch of Aleppo pepper if you have it.
