Ingredients

  • ½ lb cooked shrimp, medium
  • 1 can (12 oz) spam, diced
  • 3 cups cooked white rice, day-old or chilled
  • 1 cup fresh pineapple, cut into chunks
  • 3 tbsp soy sauce
  • 2 tbsp butter
  • 2 large egg
  • ¼ cup green onion, chopped

Instructions

    Heat 1 tbsp butter in a large skillet over medium-high until foaming, then brown the diced spam until edges crisp, ~4 minutes.

    Push spam to the side, crack eggs into the empty space and scramble until cooked through, then mix with spam.

    Add shrimp and the remaining 1 tbsp butter; toss until heated through, about 2 minutes.

    Add rice, breaking up clumps as you stir, then drizzle soy sauce over and toss until every grain looks glossy, ~2 minutes.

    Fold in pineapple chunks and green onion; cook for 1 minute until fragrant, then slide onto a serving plate.

    Serve warm with fresh strawberries and cold milk on the side.
