Ingredients
- ½ lb cooked shrimp, medium
- 1 can (12 oz) spam, diced
- 3 cups cooked white rice, day-old or chilled
- 1 cup fresh pineapple, cut into chunks
- 3 tbsp soy sauce
- 2 tbsp butter
- 2 large egg
- ¼ cup green onion, chopped

Heat 1 tbsp butter in a large skillet over medium-high until foaming, then brown the diced spam until edges crisp, ~4 minutes.

Push spam to the side, crack eggs into the empty space and scramble until cooked through, then mix with spam.

Add shrimp and the remaining 1 tbsp butter; toss until heated through, about 2 minutes.
