- 1 tbsp butter
- ¼ cup ham, diced
- ⅛ tsp pepper

Crack eggs into a bowl, add a pinch of salt and the pepper, then whisk until combined.

Melt butter in an 8-inch skillet over medium heat until foaming, about 60 seconds.

Pour eggs into the skillet and let them set for 20 seconds without stirring.

Gently push the set edges toward the center, tilting the skillet so uncooked egg flows to the sides.

When the top is still slightly wet but edges are set, scatter ham down the center line.
