Ingredients
- 3 cups cooked rice (day-old or chilled preferred)
- 1 cup ham, diced
- 2 whole egg
- ¾ cup frozen peas

Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

Add the rice, breaking up clumps with a wooden spoon. Stir constantly until rice is heated through and some grains turn golden, 4–5 minutes.

Push rice to the sides of the skillet. Crack eggs into the center, scramble until no raw white remains, then mix into the rice.
