Ingredients

  • 12 oz Spam
  • 3 cups cooked rice, cold
  • 3 large eggs
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 4 whole scallions
  • 2 cloves garlic cloves, minced
  • 2 tbsp neutral oil
  • ¼ tsp black pepper

Instructions

    Slice Spam into 1/2-inch-thick rectangles, then cut into 1/2-inch cubes.

    Slice scallions into 1-inch pieces, keeping white and green parts separate.

    Crack eggs into a bowl and whisk with a pinch of salt until yolks break.

    Heat neutral oil in a 12-inch skillet over medium-high heat until shimmering, ~60 seconds.

    Add Spam cubes and cook without stirring for 2 minutes until edges brown and crisp.

    Stir and cook another 2 minutes until most sides are browned and caramelized.

    Push Spam to the side of the pan, add garlic, and cook 30 seconds until fragrant.
