Ingredients
- 6 oz ramen noodles (fresh or instant, divided)
- 4 cups dashi broth or chicken broth
- 2 tbsp soy sauce
- 1 tbsp mirin or honey
- 6 oz spam, cut into thin strips
- 2 whole eggs
- 2 whole green onions, sliced thin (white and green parts separated)

Bring broth to a boil in a pot. Add soy sauce and mirin, stir to combine.

Add noodles to boiling broth and cook until tender, ~3 minutes for fresh ramen, ~4 for instant.

While noodles cook, pan-fry spam strips in a skillet over medium-high until edges are crispy and caramelized, ~3 minutes.

Boil eggs in the same pot (or a second pot) for 6–7 minutes until whites are set but yolks are still soft.

Divide noodle broth between two bowls. Top each with crispy spam, a halved soft-boiled egg, and white parts of green onion.
