Ingredients

  • 6 oz ramen noodles (fresh or instant, divided)
  • 4 cups dashi broth or chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp mirin or honey
  • 6 oz spam, cut into thin strips
  • 2 whole eggs
  • 2 whole green onions, sliced thin (white and green parts separated)

Instructions

  1. 1

Bring broth to a boil in a pot. Add soy sauce and mirin, stir to combine.

  2. 2

Add noodles to boiling broth and cook until tender, ~3 minutes for fresh ramen, ~4 for instant.

  3. 3

While noodles cook, pan-fry spam strips in a skillet over medium-high until edges are crispy and caramelized, ~3 minutes.

  4. 4

Boil eggs in the same pot (or a second pot) for 6–7 minutes until whites are set but yolks are still soft.

  5. 5

Divide noodle broth between two bowls. Top each with crispy spam, a halved soft-boiled egg, and white parts of green onion.

  6. 6

Scatter green parts of onion and a few crunchy fried noodles (crush a small handful of reserved noodles) over top. Serve hot.

Tools you’ll need
