Ingredients
- 1 lb thinly sliced beef
- 2 cups cooked rice
- 1 medium onion
- 3 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp sugar
- 2 large eggs
- 1 cup broccoli florets

Thinly slice the 1 onion. In a large skillet, heat 1 tbsp oil over medium and cook the onion until soft and translucent, about 5 minutes.

Add the 1 lb beef slices and cook until browned, about 3-4 minutes, breaking up any large pieces.

Stir in the 3 tbsp soy sauce, 2 tbsp mirin, and 1 tbsp sugar. Simmer until the sauce thickens slightly, about 2-3 minutes.

Meanwhile, bring a small pot of water to a boil. Add the 1 cup broccoli florets and cook until bright green and tender, about 3 minutes. Drain.

In a separate small pan, fry the 2 eggs sunny-side up until the whites are set but yolks are runny, about 2-3 minutes.

Divide the 2 cups cooked rice between two bowls. Top with the beef mixture, broccoli, and a fried egg each. Serve hot.
