Groundnut Soup

Ingredients
- ½ cup peanut butter
- 3 tbsp tomato paste
- 1 medium onion
- 2 medium carrot
- 1 large potato
- 4 cups vegetable broth
- ¼ cup fresh parsley
- 1 tsp salt

In a large pot, sauté the 1 chopped onion in 2 tbsp oil over medium heat until soft, about 5 minutes.

Stir in the 3 tbsp tomato paste and cook for 2 minutes, until it darkens slightly.

Add the 4 cups vegetable broth, 1 diced potato, and 2 sliced carrots. Bring to a boil, then reduce to a simmer.

Whisk in the 0.5 cup peanut butter until smooth. Simmer until vegetables are tender, about 20 minutes.

Season with 1 tsp salt (add more to taste). Stir in the 0.25 cup chopped parsley just before serving.
