Ingredients
- 4 large flour tortillas
- 2 cups cooked meat (e.g., pork, chicken, or beef), shredded
- 2 cups shredded cheese (e.g., Oaxaca, mozzarella, or Monterey Jack)
- ½ cup salsa or hot sauce
- 2 tbsp oil

Warm the 4 tortillas in a dry skillet over medium heat for 30 seconds per side, until pliable.

On one half of each tortilla, layer 1/2 cup shredded meat, 1/2 cup cheese, and 2 tbsp salsa. Fold the other half over to form a half-moon.

Heat 1 tbsp oil in a large skillet over medium-high. Cook 2 gringas at a time, pressing gently, until golden and crisp, about 3 minutes per side. Repeat with remaining oil and gringas.
