Ingredients
- 2 medium zucchini
- 2 medium bell peppers
- 1 head broccoli
- 200 g green beans
- 1 large onion
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
Instructions
- 1
Preheat your grill to medium-high heat, about 400°F (200°C).
- 2
Cut the 2 zucchinis and 2 bell peppers into 1-inch chunks. Cut the 1 head of broccoli into florets and the 1 large onion into wedges.
- 3
In a large bowl, toss all the vegetables with 3 tbsp olive oil, 1 tsp salt, and 0.5 tsp black pepper until evenly coated.
- 4
Place the vegetables in a single layer on a grill pan or directly on the grill grates. Do not crowd the pan to ensure even charring.
- 5
Grill for 10-12 minutes, turning occasionally, until the vegetables are tender and have nice char marks. The broccoli should be bright green and the onions translucent.
- 6
Remove from the grill and serve hot. Add a squeeze of lemon or a sprinkle of herbs if you like.
