Ingredients
- 1.5 lb steak (such as sirloin or flank)
- 2 large russet potatoes
- 2 medium green bell peppers
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
Instructions
- 1
Preheat oven to 425°F. Cut the 2 large potatoes into thin fries, toss with 1 tbsp olive oil, 1/2 tsp salt, and 1/2 tsp garlic powder. Spread on a baking sheet.
- 2
Bake fries for 25-30 minutes, flipping halfway, until golden and crispy. Meanwhile, slice the 2 green peppers into strips and set aside.
- 3
Pat the 1.5 lb steak dry and season both sides with remaining 1/2 tsp salt, 1/2 tsp black pepper, and 1/2 tsp garlic powder.
- 4
Heat a grill or grill pan over high heat. Grill steak for 4-5 minutes per side for medium-rare, or until it reaches your desired doneness. Let rest 5 minutes.
- 5
In a skillet over medium-high, heat 2 tbsp olive oil. Add the sliced peppers and cook, stirring, until charred and tender, about 5-7 minutes.
- 6
Slice the rested steak against the grain. Serve with fries and peppers on the side.
