Ingredients
- 1 lb flank steak
- 8 small corn tortillas
- 1 medium red onion
- 2 whole lime
- ½ cup sour cream
- ½ cup salsa

Season the 1 lb flank steak with salt and pepper. Heat a grill or grill pan over high heat until smoking, about 3 minutes.

Grill the steak for 4-5 minutes per side for medium-rare, until nicely charred and internal temperature reaches 130°F. Let rest for 5 minutes, then slice thinly against the grain.

While the steak rests, thinly slice the 1 red onion and toss with the juice of 1 lime and a pinch of salt. Let sit for 5 minutes to quick-pickle.

Warm the 8 corn tortillas on the grill or in a dry skillet for 30 seconds per side, until soft and lightly charred.
