Ingredients

  • 1.5 lb snoek fillets
  • 1 lemon
  • 2 garlic cloves
  • 3 tbsp olive oil
  • ¼ cup fresh parsley
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. 1

Pat the 1.5 lb snoek fillets dry with paper towels and season both sides with 1 tsp salt and 0.5 tsp black pepper.

  2. 2

In a small bowl, mix the juice of 1 lemon, 3 tbsp olive oil, 2 minced garlic cloves, and 0.25 cup chopped parsley to make a baste.

  3. 3

Preheat your grill to medium-high heat (about 400°F). Brush the grill grate with oil to prevent sticking.

  4. 4

Place the fillets skin-side down on the grill. Cook for 4-5 minutes, until the skin is crisp and releases easily from the grate.

  5. 5

Flip the fillets and brush generously with the lemon-garlic baste. Cook for another 4-5 minutes, until the fish is opaque and flakes easily with a fork.

  6. 6

Remove from the grill and brush with any remaining baste. Serve immediately with lemon wedges if desired.

  7. 7

Enjoy your smoky, flavorful grilled snoek!
