- 1 lemon
- 2 garlic cloves
- 3 tbsp olive oil
- ¼ cup fresh parsley
- 1 tsp salt

Pat the 1.5 lb snoek fillets dry with paper towels and season both sides with 1 tsp salt and 0.5 tsp black pepper.

In a small bowl, mix the juice of 1 lemon, 3 tbsp olive oil, 2 minced garlic cloves, and 0.25 cup chopped parsley to make a baste.

Preheat your grill to medium-high heat (about 400°F). Brush the grill grate with oil to prevent sticking.

Place the fillets skin-side down on the grill. Cook for 4-5 minutes, until the skin is crisp and releases easily from the grate.
