Ingredients

  • 2 lb sirloin steak
  • 2 tbsp olive oil
  • 1.5 tsp kosher salt
  • 1 tsp black pepper

Instructions

    Take the 2 lb sirloin steak out of the fridge and let it sit at room temperature for 30 minutes.

    Pat the steak dry with paper towels, then rub with 2 tbsp olive oil, 1.5 tsp kosher salt, and 1 tsp black pepper.

    Preheat a charcoal grill to high heat (about 450°F) until the coals are glowing and covered with white ash.

    Place the steak on the grill and cook for 4-5 minutes without moving, until grill marks form and it releases easily.

    Flip the steak and cook for another 4-5 minutes for medium-rare, or until the internal temperature reaches 130°F.

    Remove the steak from the grill and let it rest on a cutting board for 5-10 minutes before slicing.
